Meatloaf- Batch Recipe

I decided to try my hand at a batch recipe.  Make now, freeze, cook and eat later.  I hope you enjoy!

You will need:

5 lbs. ground beef
3 eggs
1 cup bread crumbs (I used crushed saltine crackers.)
1 cup ketchup
1/3 cup Dale's Seasoning
1 cup onions, finely chopped ( or 1 tbsp. onion powder. My picky eaters won't touch onions)
1/2 tbsp. garlic powder
Salt and pepper to taste

Directions:

1.  To large bowl add all ingredients except the ground beef. mix togther.

2. Add ground beef and mix together

3. Divide mixture into 3 loaves, place 2 in freezer bags and freeze.

4. Put remaining loaf into glass dish and cook at 350 degrees for about 1 1/2  to 2 hrs.

About half way through cooking, I drain any grease that is in the cooking dish and add ketchup to cover top of meatloaf and return to oven to finish cooking.

Chili For An Army

You will need:

6-7 qt. Crock Pot
2.5 lbs. ground beef, cooked and drained
2- 15.5 oz. cans light red kidney beans, drained
2- 30 oz. cans pinto beans, drained
2- 28 oz. cans crushed tomatoes
2 cups water
3 envelopes chili seasoning

Directions:

Add all ingredients to crock pot and cook on low for up to 8 hours.

See as I am only cooking for a family of 3, there are tons of leftovers. So if any of you have some ideas on what to do with leftovers, please, feel free to post it!

Cheap & Easy Chicken & Rice


You will need:

2-3 Boneless, skinless chicken breasts
2 cups instant white rice
2 cups chicken broth 
2 cups broccoli florettes
2 tbsp. butter
Salt and pepper to taste

Directions:

1. Boil chicken with about 4 cups of water, butter and salt till it is done. Reserve chicken broth for cooking rice.

2. Bring 2 cups of chicken broth to a boil and add rice, cover and steam for 5 minutes.

3. Shred chicken and add to rice along with steamed broccoli

And voila! Super easy and yummy recipe.  You can feel free to add in any vegetables to make it a little healthier.
Serves 4-5

I ended up making 3 cups of rice and 3 chicken breasts when i made it. DH doesn't eat rice, so i bagged up lunch sized portions for me and Devin and froze it.  I'm sorry the pictures are all blurry.  I am having to use my phone for the pics untill we find the cord for our digital camera.  Better pics are coming soon, I promise!

Stuffed Cabbage Stoup

Stuffed Cabbage Stoup!

You will need:

1-1 1/2 lbs. ground beef
1 sm. head of cabbage, chopped
3 sm. onions, chopped
1- 14.5 oz. can diced tomatoes
1- 28 oz. can crushed tomatoes
2 tsp. italian seasonings
2 tsp. dried parsley
2 tsp. garlic powder
6-8 cups water or beef broth
Salt and pepper to taste

Directions:

1. Chop onions and add to stock pot, cover with water and simmer till desired tenderness.
2. Brown ground beef and drain.
3. Add remaining ingredients and ground beef to onions.
4. Let simmer til cabbage is desired tenderness.

I used a total 8 cups of water for my stuffed cabbage stoup and let it simmer atleast an hour.  I also added a little extra garlic powder and salt for extra flavor.  Feel free to tweak this recipe any way you like.  Let me know how yours comes out and what you think of it.
